Week 21, Meal 3: How not to marinate steak

Chef Brian and I had a bit of a mix up with Week 21, Meal 3: Chimichurri marinated flat iron steak over ancho roasted sweet potatoes, corn and tomatoes.

The problem was in the instructions for the chimichurri, the condiment of choice for beef in South America — specifically Argentina. See, the chimi I usually have is mostly parsley flake, floating in olive oil. Chef Brian wanted me to mix up those ingredients in a food processor so that it created more of a paste to marinate the meat in.

He wrote mix, but meant “mix in a food processor,” so I mixed by hand and was puzzled by the consistency and it’s lack of liquid. So I doubled the liquid. Then tripled the liquid, and by the next day I had pickled a gorgeous piece of flat iron steak.

Week 15, Meal 3: “Fried” chicken with collard greens and ham hock

Part of the hesitation to do fried chicken on the blog was because, well, let’s face it, have you ever had oven-baked fried chicken better than the fried version?

There’s just something about buttermilk-soaked, double-breaded chicken going from drab to fab in a vat of hot oil that I never thought could be beat.

Before starting this blog, deep-fry oil and cheese were two staples of my not-so-nutritional nutrition plan. But after several weeks of eating Chef Brian’s dishes – most prepared with only 1 teaspoon to 1 tablespoon of oil per serving – I just can’t eat oily foods like I used to.

That’s where Week 15, Meal 3: “Fried” chicken with collard greens and ham hock comes in handy.

I’ve had plenty of “oven-fried” chicken before, Shake ‘n’ Bake and homespun versions, but nothing has come close to matching the explosive flavor or undeniable crunch of Chef Brian’s baked goods. Continue reading Week 15, Meal 3: “Fried” chicken with collard greens and ham hock

Week 13, Meal 3: Grilled chermoula-marinated chicken over stewed chickpea and tomato

If there’s one thing I can trust Chef Brian with wholeheartedly, it’s putting together a badass marinade for some chicken.

He set the bar high with a garlicky, herbaceous marinade for Week 1: Chicken and apples, and then he managed to blow my taste buds away with the spice mix on for the tandoori chicken tacos we did for Fusion Taco Week.

He managed to do it again with the smoky punch of chermoula, the paprika and herb-filled marinade of Morocco.
