Week 26: BFD2

I live in a world where my wife thinks it’s crazy to eat breakfast — my favorite meal of the day — for dinner.

So, take it from me, it’s a big-f’n-deal when I get some BfD. It’s an even bigger deal when Chef Brian is in charge of the menu because he’s just as good at making yummy morning fare as he is at crafting dressed-up dinners.

Here’s what’s cookin’:

Week 26, Meal 1: Orange-ricotta pancakes with honey-pistachio yogurt

Week 26, Meal 2: Parmesan polenta topped with asparagus, leek and poached eggs with prosciutto, tomato and basil salsa

Week 26, Meal 3: Turkey pastrami hash and eggs

Week 26, Meal 1: Orange-ricotta pancakes with honey-pistachio yogurt

Pancakes
3/4 c whole wheat flour
1/4 c low-fat or non-fat milk
1 T baking powder
1/8 t nutmeg
1/4 t salt
1 T sugar
3/4 c part-skim ricotta cheese
2 eggs
1 orange, zested and 1/2 juiced
cooking spray, as needed

Yogurt
2 T pistachios, finely chopped
1 T honey
5 oz. non-fat Greek yogurt

Week 26, Meal 2: Parmesan polenta topped with asparagus, leek and poached eggs with prosciutto, tomato and basil salsa

Polenta
3/4 cup water
3/4 cup low-fat or non-fat milk
3 T polenta
1/2 t salt
1/4 t pepper
1/2 oz. parmesan cheese, shredded

Veggies
1/2 T olive oil
1/2 pound asparagus, bottoms discarded, cut into 1 inch pieces
1 leek, white and light green only, cleaned well, and thinly sliced

Eggs
4 large eggs
1 T white vinegar
1 t salt

Salsa
1/2 T olive oil
1 roma tomato, seeded and diced
1 T basil, chiffonade
2 oz. prosciutto (A thick slice is better but it might be tough to get a thick 2 oz slice. If you get it thick I prefer to small dice it. If you get it thin then slice it thin.)

Week 26, Meal 2: Turkey pastrami hash and eggs

Hash
1 T olive oil
8 oz. turkey pastrami, one thick slice, large diced
3 large leaves black, lacinto or dino kale, stemmed and 1/4″ sliced
1 red bell pepper, seeded and medium diced
1/2 yellow onion, small diced
1 clove garlic, minced
1 medium red potato, medium diced
salt and pepper, to taste

Poached eggs
4 large eggs
1T white vinegar
1 t salt

Other
Smoked paprika, for garnish
