One of my absolute favorite things (well, other than sandwiches) is breakfast for dinner.
Partly because the rush of cheating on dinner with breakfast is kinda hot, but also because French toast kicks ass no matter what time of day it is.
It didn’t take much convincing on my part when I asked Chef Brian to whip up a menu featuring morning favorites and he’s come through with some yummy (and quick!) dishes for Week 4:
Meal 1: Frittata with spinach, mushroom, tomato and feta
Meal 2: Cinnamon French toast with blueberry compote
Meal 3: Huevos Rancheros

Anyhoo … our list is good for two portions of each meal. I double mine so I always have leftovers for the next day.

Meal 1: Huevos Rancheros
cooking spray
2 corn tortillas
1 cup of cooked black beans (ingredients below)
1- 1 1/2 cup Ranchero sauce (ingredients below)
2 oz. oaxacan cheese
1 avocado diced
2 eggs, cooked over easy
Ranchero sauce (makes 4 portions)
1 t olive oil
1 yellow onion, sliced
1 pasilla pepper, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
2 cloves garlic, minced
1 jalapeno, minced
1- 14.5 oz. can fire roasted tomatoes (Hunt’s)
1/2 t cumin
1/2 t paprika
2 T chopped cilantro
Black Beans (makes 4 portions)
1 t olive oil
1 shallot, minced
1 clove garlic, minced
1/2 t cumin
1- 14 oz can black beans, drained
1 cup chicken stock or water
Meal 2: Frittata with spinach, mushroom, tomato and feta
1 large portabella mushroom, cleaned, gills removed, diced
5 oz. raw spinach, roughly chopped
2 oz. feta cheese, crumbled
2 roma tomatoes, seeded and diced
6 eggs
1/2 cup fat free or low-fat milk
salt and pepper, to taste
Meal 3: Cinnamon French toast with blueberry compote
Cooking spray
4 pieces of whole grain bread
3 eggs
1 T cinnamon
1 t vanilla
1/4 cup fat free or lowfat milk
salt and pepper, to taste
1/2 cup blueberry compote (ingredients below)
Blueberry Compote
1 10-oz. bag frozen blueberries, unsweetened
1 cup water
2 T honey

Can bacon dipped in mayo be a theme?
No. I mean. Yes. (but sadly, no.)
